Hot Artichoke Crabmeat Dip
1 pkg (8 oz.) cream cheese, softened
1 cup mayo
1 garlic clove, pressed
1 can (14 oz.) artichoke hearts in water, drained and chopped
1 pkg (8 oz.) imitation crabmeat, chopped (1 1/2 c.)
3/4 c. (3 oz.) grated fresh parmesan cheese
1/3 c. thinly sliced green onions with tops
1/8 tsp. grond. black pepper
1/3 c. chopped red bell pepper
Additional slcied green onions
Baked Pita Chips
1 Preheat oven to 350. Combine cream cheese and mayonnaise: mix well. add garlic.
2. add artichokes, crabmeat, cheese, green onions, 1 tsp. lemon zest, and black pepper. mix well.
3. Spoon mixture into baking dish. Bake 25-30 min. or until golden brown around edges. Sprinkle with red bell pepper and additional green onions.
Serve with baked pita chips.
Yield: 4 cups (16 servings)
*any style imitation crabmeat-chunk, flake or leg--can be used in this recipe.
* dip can be made up to a day in advance and heated according to recipe when ready to serve.
