Pizza Dough (Naples)


1 c. water

1 C. cake flour

1 tsp. active dry yeast

1 tsp. salt

1-2/3 - 2 C.  flour (all-purpose)

1 tsp. sugar





Process in food processor.  Should be very soft dough.  roll out out on corn-meal dusted inverted cookie sheet and slide onto preheated pizza stone place on bottom of  very hot oven (450-500 degrees)
