W-R LIGHT ROLLS

 

1 pkg dry yeast

1/2 c. shortening

1/4 c. warm water

2 t. salt

1 t. sugar

2 eggs (well beaten)

2 c. milk

7 c. (approx) flour

1/2 c. sugar

 

 

 

 

Dissolve yeast in 1/4 c. warm water to which 1 tsp. sugar has been added.  Scald milk, add sugar, shortening and salt and cool to lukewarm.  Add flour enough to make medium thick batter and beat well.  Add beaten eggs and dissolved yeast and beat.  Add remaining flour.  When too thick to mix by spoon, pour onto floured board and knead until smooth and elastic.  Put into greased bowl and place in warm place until dough doubles in size.  Knead down and shape into light rolls.  This is a basic recipe and may be used for cinnamon rolls, tea rings, etc.  Bake in greased pan in 375 degree oven about 15 or 20 minuntes, or until brown. 

 

NOTE:  To use W-R Enriched All-Purpose Flour without sifting, simply use one level tablespoon per cup flour less than called for in the above recipe.
