Zweiback

 

4 c. milk

1/2 c. sugar

1 c. lard

12 c. flour (or as needed)

3 t. salt

2 T. granular yeast

 

Combine all the ingredients and knead until elastic and spongy.  Let rise until double in bulk. Punch down and let rise about 1/2 hour.  Shape into Zweibacks.  Let rise.  Bake at 350°-375° until golden brown.   Makes 4-5 dozen.

 

bake @ 350?  w/ convection?
