Bonnie’s truffles


12 oz. semi-sweet choc. chips

1 Tbs. Liquor, such as Godiva

4 Tbs. unsalted butter

   or Kahula OR

1 C. heavy cream

    1 1/2 tsp. almond extract


Melted chocolate for dipping




Put the chips and butter in a food processor or blender.  Heat cream until steaming (2 min. 30 sec. in the microwave).  Turn on blender or processor and pour cream over chips and butter: blend on high until creamy and chocolate is melted (will have consistency of thin pudding). Blend in liquor or flavoring.  Pour into a bowl and refrigerate or freeze until firm.  Using just less than 1 tsp., roll into balls and chill again. If dipping in chocolate, let the melted chocolate cool slightly to prevent the centers from becoming too soft.  Can also be rolled in cocoa powder, crushed nuts, coconut, etc., but will need to be chilled to serve.
