Peanut Butter Cookies
I c. butter flavored Crisco
I c. creamy peanut butter
1 C. sugar
1 c. packed brown sugar
1 tsp. vanilla extract
3 eggs
3 c. flour
2 tsp. baking soda
1/4 tsp. salt

Filling:
1/2 c. creamy peanut butter
c. confectioners sugar
1 tsp. vanilla
5 to 6 tbs.milk


Cream the shortening, peanut butter and sugars. Add vanilla. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; add to creamed mixture. Shape into one inch balls and place 2 in. apart on ungreased baking sheets. Flatted to 3/8 inch thickness with a fork BAke at 375 for 7-8 mm. or until golden. Cool on wire racks. In a mixing bowl, beat filling ingredients until smooth. Spread on half of the cookies and top each with another cookie. Yield: About 4 doz.
