Almond Cake
Ingredients:
- 1 egg
- 1/2 cup buttermilk
- 1/3 cup melted butter, cooled
- 1/2 tsp vanilla
- 3/4 cup sugar
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/3 cup water
- 1/2 cup sugar
- 1/2 tsp almond extract
- 2/3 cup toasted sliced almonds
Preheat oven to 350 degrees F. Prepare an 8" round cake pan
with oil and flour or parchment paper. Mix egg and buttermilk in a medium size
bowl. Add butter and vanilla and stir in. In a separate bowl, mix 3/4 cup
sugar, flour, baking powder and baking soda and add to liquid mixture. Stir
only until mixed and pour into prepared cake pan. Bake 30-35 minutes or until
nicely browned and a toothpick inserted in the center comes out clean. As soon
as pan is cool enough to handle, transfer to a serving platter. Then, while
the cake is still hot, heat the water, 1/2 cup sugar and almond extract until
sugar has dissolved. Sprinkle almonds over cake and spoon hot syrup over,
soaking it into the whole cake. Serves 6-8.
