Whoopie Pies 

(Aunt Elaine's recipe)

1 cup shortening 

2 cups white sugar

2 eggs

2 egg yolks, save the whites

1 cup buttermilk

4 heaping cups flour

1 cup cocoa

1/2 tsp salt

 1 tsp baking powder

1 cup hot water with 2 tsp soda

 

Filling:

2 egg whites

4 cups powdered sugar

2 tsp vanilla

1/4 tsp salt

1 cup Crisco

 

For cookie halves: Cream i cup shortening and white sugar. Add eggs and egg yolks; beat. Add buttermilk and mix. Add flour, cocoa, 1/2 tsp salt and baking powder. Mix well. Last mix in hot water and soda. Drop by spoonfuls onto cookie sheets. Bake at 400 for 6 to 7 minutes.

For filling: Beat 2 egg whites, 2 cups powdered sugar, vanilla and 1/4 tsp salt until fluffy. Add 1 cup Crisco and 2 more cups powdered sugar. Spread between 2 cookie halves.
