Chinese Chicken Salad




Chinese Chicken Salad:

4 ounces

Cooked chicken breast, shredded

2 cups

Dark leafy greens, torn into bite-size pieces


To 2 green onions

2 tbsp.

Toasted sliced almonds


Celery stalk, thinly sliced


Radishes, thinly sliced


Rice Vinegar Dressing (recipe below) or store bought Chinese chicken salad dressing


Rice Vinegar Dressing:

2 tbsp.

Vegetable oil

1 tbsp.

Seasoned rice vinegar



Chinese Chicken Salad:

Combine chicken with lettuce, onion, almonds, celery, and radishes.


Pack in an air-tight container. Send dressing in a separate small plastic container.



Rice Vinegar Dressing:

Combine oil and vinegar in a small container with tight fitting lid and shake until well blended.
