Ham Pasta Primavera




3 Tbsp

Unsalted butter, divided

1 cup

Pea pods

1/2 cup

Shredded carrots


Small red pepper, cut into strips


Green onions, sliced

3/4 cup

Evaporated skim milk

3 cups

(12oz) ham, cut into cubes

10 oz

Uncooked spagetti, hot cooked and drained


Fresh basil




Pepper, freshly ground



Melt 1 Tbsp butter in medium suacepan over medium heat. Add vegetables; cook and stir until tender. Add remaining 2 Tbsp butter , milk and ham. Cook over medium-high heat 3 to 4 minutes, or until mixture thickens slightly. Serve over warm spagetti. Garnish with fresh basil, cilantro and freshly ground black pepper, if desired
