Pasta with Portabellas  tomatoes


 1 pkg cooked pasta (bowties,

1 c. Portabella mushrooms,



3 T. olive oil

1 c. grape tomatoes

2 T. minced garlic

1/4 c. olives, whole or sliced

1/4 c. onion, chopped

1 T. parsley, chopped


1/4 c. Feta cheese, crumbled


Saute garlic and onion in oil until just tender.  Add mushrooms, tomatoes, and olives.  Cover and cook on low, until tomatoes “pop” and are cooked slightly. Stir in parsley and cooked pasta.  Add crumbled feta cheese and fold in.  Continue to heat on low just until cheese starts to soften.
