This
recipe was a wonderful success in that my kids ate it, too! Hooray! I used a
prepackaged rice and beans mix which cooks up really fast and is very tasty.
Wrap tortillas can be purchased in your grocery store. They come in various
wonderful flavors. We used Zesty Garlic and Herb for ours.
Ingredients

Santa Fe Rice and Beans, prepared according to pkg directions |

"wrap-style" flour tortillas, heated according to pkg directions |

Vegetable oil (olive, safflower, or canola) |

Large onion, coarsely chopped |

Mushrooms, sliced |

Bell
peppers, coarsely chopped (I used green and red for color) |

Garlic, minced (or more, to taste) |

Fresh cilantro, chopped |

Cheddar and/or Monterey Jack cheese |

Nonfat plain yogurt (or sour cream) |

Preparation
Add oil
to a heated large skillet. Add onions and saute until soft-crisp (about 3
minutes). Add garlic, peppers, mushrooms, cilantro, cumin, salt and pepper.
Stir fry until soft but not mushy (about 5 minutes).
Place
tortilla on plate. Spoon beans and rice into center, then add veggie mix.
Top with cheese, followed by a little yogurt and salsa. Wrap and eat. Yummy
and oh, so healthy. |
