CEASAR SALAD

>>Absolutely! Dressing: One part lemon juice, 2 1/2 parts good quality

>>extravirgin olive oil, as much pressed or minced garlic as you (or your

>>victims) can tolerate, a good healthy quantity of freshly ground black

>>pepper, twice as much salt as you think you should put in there, a nice

>>glop of Dijon mustard, and a little sugar. Put all ingredients in a

>>container with a TIGHTLY FITTING lid, and shake vigorously.

>Wow.  Somewhat different from what I do.  Try this:

>1/3 cup virgin olive oil

>1/3 cup + 1 tbsp fresh lemon juice

>1 soft boiled egg (5-6 minutes)

>1 anchovy

>2 garlic cloves

>1 tbsp grated parmesan cheese

>Romaine lettuce

>2 more tbsp grated parmesan cheese

>Blend first six ingredients together using a blender or food processor.

>Build 2 cups of croutons however you wish.  Note that fresh croutons really

>make this salad.

>Chop or tear 1 large head of Romaine lettuce, add most of the dressing and

>the last 2 tbsp of grated parmesan, toss, then add croutons and toss again.

>Add some more dressing if necessary, and toss some more.  Serves 4 with a

>main dish, or serves 2 for dinner.
