Spinach mashed potatoes


6-8 large potatoes

2 t. salt

3/4 c. sour cream

1/4 t. pepper

1 t. sugar

1 c. cheddar cheese, shredded

1/4 lb. butter

2 T. chives

1 pkg. frozen spinach

1/4 t. dill weed


Cook, chop & drain spinach.  Set aside.  Cook & mash potatoes; add sour cream, sugar, butter, salt & pepper.  Beat until light and fluffy.  Add chives, dill and spinach.  Place in a greased casserole and sprinkle with cheese.  Bake at 400 for 20 minutes.

Can be made ahead and refrigerated; allow a little longer baking time.
